Yuzu Salt Ramen is already a low-carb, high-protein dish, but the "Protein Ramen (Yuzu Salt)" that we are now releasing takes these characteristics even further and also provides plenty of dietary fiber, which is often lacking in our daily lives.
- Development Background
Our goal was to create a ramen that is delicious and healthy, without forcing yourself or holding back .
AFURI began its mail-order business in late April 2020, when all of its stores were closed due to the COVID-19 pandemic. The business started small with a limited number of products, with the aim of providing "the same taste as in the stores," but through repeated improvements in quality and product development, it has now expanded to offer around 50 items.
Amid the COVID-19 pandemic that has been going on for nearly a year and a half, we are increasingly feeling that our customers are becoming more health conscious. With restrictions on going to the office or school, and more time spent at home, it seems that many people are feeling a lack of exercise. The number of people choosing konjac noodles, both in our brick-and-mortar stores and through mail order, is increasing dramatically.
On the other hand, we wondered, "Is it possible to create a product that has the same taste and satisfaction as regular ramen, but is also healthy? We want to create a product that will please people who are working on getting fit." This is how we began development of this product.
The noodles were developed with the cooperation of Nisshin Flour Milling Co., Ltd., which supplies the ingredients for AFURI's homemade noodles. After more than six months of development and repeated trial and error, they succeeded in developing a special noodle that combines both flavor and nutritional balance. The noodles contain whole wheat flour, which is low in carbohydrates and rich in dietary fiber. Another feature is that they use a lot of egg whites to enhance the protein content.
For the ingredients, Suzuhiro Kamaboko Co., Ltd., a long-established company in Kanagawa, has been commissioned to prepare two types of deep-fried kamaboko (plain/green onion and ginger) made especially for protein ramen. The white fish used to make kamaboko is low in fat and high in protein. It also contains a good balance of essential amino acids, making it an ideal ingredient with an amino acid score of 100. It also pairs perfectly with AFURI's ramen soup, which is made with a focus on dashi.

At AFURI, we value the "power of ingredients." We do not use synthetic colorings, preservatives, or chemical seasonings (umami seasonings). We work hard every day to make safe and delicious ramen that can be enjoyed with peace of mind by small children and those who are concerned about their health.
In addition, our partner, Suzuhiro Kamaboko Co., Ltd., also makes kamaboko using natural ingredients, without any chemical seasonings or added preservatives, with the aim of "cherishing the life of the fish and bringing out its deliciousness."
