Ramen AFURI From the foot of Mount Afuri
Origin of the name
The name "AFURI" comes from Mt. Oyama (commonly known as Mt. Afuri), located at the eastern end of the Tanzawa mountain range in Kanagawa Prefecture.
The soup is named "AFURI" because it is made using the pure water that springs from the foot of Mt. Afuri.
About Mount Afuri
Mount Afurisan has been loved since ancient times as the father mountain of Mount Fuji.
Originally it was called "Amefuriyama" (Rain Mountain) and was a sacred mountain where people would pray for bountiful harvests.
Its majestic and dignified appearance captivated many people, and it is said that during the Edo period it attracted hundreds of thousands of visitors each year.
We at AFURI also want to be a presence that brings happiness to people in the modern-day Edo city of Tokyo.
Commitment to Ramen
AFURI's ramen is prepared at a central kitchen located at the foot of Mount Afurisan in Kiyokawa Village, Kanagawa Prefecture.
We add domestic whole chicken, seafood, and aromatic vegetables to clear, soft water that is perfect for preparing soup, and simmer slowly while skimming off the scum.
The flavor is so delicate that even a slight boil can change its taste and aroma, and the climate, humidity, heat, and time are all carefully calculated in order to create the flavor.
The ramen is flavored with special salt and soy sauce sauces. The roast pork and other ingredients are all prepared to achieve the best taste on the day.
It is prepared daily at the foot of Mt. Afurisan, carefully cooked in each store, and served to customers.

What AFURI values is the "power of materials."
We do not use any synthetic colorings or preservatives, nor do we use any chemical seasonings (umami seasonings).
Every day, we work hard to create safe and delicious ramen that can be enjoyed with peace of mind by small children and those who are concerned about their health.
Furthermore, when it comes to the dashi stock, which is what we are most particular about, we add it just before serving it to customers, ensuring that it is at its most fragrant.
Our precious ingredients
Clear water. Fresh chicken bones and pork, kelp and dried sardines.
We use a variety of carefully selected ingredients, including dried bonito flakes and aromatic vegetables. AFURI has deep respect for all the ingredients we use, as well as the land and producers, and spares no effort to bring out the best in them.
In addition, based on the idea that using ingredients is like "receiving life," we make sure to make secondary and tertiary use of ingredients when creating our ramen.
