The long-awaited "Karuro Tsukemen" is now available to order starting today!
I wrote in my previous post that there are many customers who say they prefer tsukemen to ramen.
Among them, there is one dish in particular that has a loyal fan base, with some people saying, "I only eat Spicy Tsukemen!"
The pure water of Mt. Afuri, the symbol of AFURI, is used to create a delicious broth made by slowly simmering fresh chicken bones, aromatic vegetables, and seafood. The special dipping sauce, which is made by adding three types of soy sauce, fish sauce, broth from roasted pork, black vinegar, and brown sugar syrup, is one of a kind. It is an original taste that can only be found at AFURI.
The AFURI style is to serve it cold (both the noodles and dipping sauce are cold) with the aroma of special sesame chili oil.
The noodles are made from two different types of domestic wheat with different characteristics, as well as nutritious whole wheat flour. They are kneaded in a vacuum mixer and then kneaded by hand, making them the familiar "vacuum hand-kneaded noodles." For Kararo Tsukemen, we sprinkle a generous amount of umami-spicy powder on top.
