This soup stock is made using an abundance of carefully selected ingredients, such as fresh chicken bones, aromatic vegetables, kelp, dried sardines, and dried fish (bonito flakes, dried round mullet flakes, dried mackerel flakes, etc.), and is carefully made over a long period of time and effort to condense the flavor.

The AFURI-original dipping sauce is made with three types of sharp soy sauce, fish sauce, black vinegar, and aromatic oils to create a rich, appetizing flavor. The AFURI style is to add homemade chili oil made with fragrant sesame oil and serve it cold (both the noodles and the dipping sauce are cold).

The noodles are made from two different types of domestic wheat with different characteristics, as well as nutritious whole wheat flour. They are kneaded in a vacuum mixer and then kneaded by hand, making them the same "vacuum hand-kneaded noodles" that are served in stores.

The ingredients are the same as those in the restaurant, including plenty of juicy braised pork, specially made bamboo shoots (thinly sliced ​​bamboo shoots simmered in a sweet and spicy sauce), and extra-finely chopped nori seaweed. You can also add mizuna (potherb mustard greens) or boiled eggs to taste.

<For cold/cold> ← Recommended!
1) Thaw the dipping sauce under running water (about 10 minutes). This will go faster if you rub it lightly halfway through.

② Heat the braised pork and bamboo shoots in a hot water bath for about 3 minutes. (You can also transfer them to a container and use the microwave.)

③Boil the noodles in plenty of water. ※On high heat 4 minutes 30 seconds to 5 minutes 30 seconds

4. Pour the dipping sauce into a bowl and add 1 teaspoon of toppings.

5. Rinse the noodles under running water to remove any slime and drain.

6. Place the noodles in a bowl, sprinkle with spicy chili powder, add the toppings and it's done!

In addition to the ingredients that come with it, we also recommend mizuna, boiled eggs, and chopped green onions.

<If serving with hot sauce>
Heat the dipping sauce made in step ① in a boiling water bath for about 5 minutes.

<When using hot noodles>
Cook the noodles over high heat in step 3. After boiling for 4 to 4.5 minutes ,
Rinse under running water to remove the slime, then return to the boiling water and heat for 10 seconds before serving.
*If you sprinkle a little vegetable oil that you have at home on the noodles, they will not stick together easily.
