"Chilled Yuzu Salt Noodles" is a summer staple at AFURI and can be enjoyed even in the summer. The clear chicken soup, which carefully brings out the power of the ingredients such as fresh chicken bones and aromatic vegetables, is combined with a rich seafood stock made from a large amount of kelp, dried sardines, bonito flakes, and mackerel flakes to create a sophisticated and deep chilled soup. The special "Yuzu Jelly" made from yuzu from Kochi Prefecture dissolves into the soup, making it a refreshing dish that gets more and more delicious as you eat it. It is a summer-only dish.
Please enjoy by drizzling on as much fragrant freshly squeezed yuzu juice from Kochi Prefecture as you like. The refreshing soup that seeps into your body is delicious and refreshing even on hot days or when you don't have much of an appetite.
The ingredients are thick and juicy roasted pork (or chicken pork), specially made bamboo shoots (thinly sliced bamboo shoots simmered in a sweet and spicy sauce), and specially made yuzu jelly. You can also add shredded spring onions, mizuna, boiled eggs, etc. to taste.

▼How to eat (delicious recipe included)
(Preparation) Place the bowl in the freezer to chill in advance. Thaw the yuzu juice and yuzu jelly in the refrigerator or under running water. *If you choose chicken char siu, no heating is required, so slice it after thawing under running water/in the refrigerator.
1. Thaw the soup (it is recommended to thaw in the refrigerator, or thaw under running water if you are in a hurry).
② Heat the seared pork slices and bamboo shoots in a hot water bath (or transfer to a container and microwave for about 1 minute).
3. Fill a large pot with plenty of water and when it boils, add the noodles.
Once it has naturally loosened, spread it out with chopsticks and boil for about 1.5 to 2 minutes.
④ Rinse the boiled noodles thoroughly under running water to remove any slime and drain.
Pour the cold soup into a bowl taken out of the refrigerator. Place the noodles in the soup and arrange them with chopsticks.
⑥ Arrange the ingredients. In addition to the ingredients that come with the dish, we recommend adding mizuna (potherb mustard greens), boiled eggs, white onions, and myoga ginger.
Please knead the special yuzu jelly gently before opening and enjoying.
Finally, shake well and pour in the yuzu juice, and it's done.
