Chilled Yuzu Karakuri Ramen (3 servings)

A summer staple at AFURI is the "Chilled Yuzu Salt Noodles," but now a chilled spicy version has finally arrived! [Spicy level 4 (0-8)]

AFURI's proud chicken clear soup is made with a large amount of high-quality dried sardines, kelp, bonito flakes, etc. It is seasoned with a delicious white soy sauce sauce, and various types of chili powder, fresh chili puree, aromatic chili oil, etc. are used to express a deep spiciness with different characteristics. The sourness of "Tasty Spicy Sour" is achieved by using freshly squeezed yuzu juice from Kochi Prefecture.

The noodles are thin, homemade noodles made from an original blend of wheat flour and Japanese pepper powder, cut at No. 24. Enjoy the refreshing aroma that harmonizes with the well-balanced soup of umami, spiciness, and sourness.

The ingredients, such as collagen-rich, tender pork slices (or chicken pork slices) and crunchy bamboo shoots seasoned with dashi, are carefully prepared to decorate the bowl. Add spring onions, mizuna (coriander also goes well with this), myoga ginger, boiled eggs, etc. to taste. We also recommend floating ice on top to cool it down.

AFURI's ramen contains no artificial seasonings, synthetic colorings or preservatives.

(Preparation) Place the bowl in the freezer to chill in advance. Thaw the soup and yuzu juice under running water or in the refrigerator. (If you are in a hurry, you can thaw them faster by kneading them slightly while running them under running water.)

1. Fill a medium pot with water and boil. Place the char siu and bamboo shoots in the water in their original packaging and heat for about 3 minutes. (You can also transfer them to a container and heat them in the microwave.) *If you choose chicken char siu, no heating is required, so simply defrost under running water or in the refrigerator before slicing.

②Put plenty of water into another large pot and heat it. When it boils, add the noodles.
Once it has naturally loosened, spread it out with chopsticks and boil for 1 minute 30 seconds to 2 minutes until it is to your desired firmness.

3) Add 1 tablespoon (about 6g) of spicy red powder and 1 bottle (15cc) of yuzu juice to a bowl that has been chilled in the freezer, then pour in the thawed, cold soup and mix well.

④ Rinse the boiled noodles thoroughly under running water to remove any slime and drain. Place the noodles in the soup, arrange them with chopsticks, and then top with the ingredients. In addition to the ingredients provided, other recommended toppings include mizuna (potherb mustard greens), boiled eggs, shredded green onions, and myoga ginger.
